Topaz is a relatively new Australian hop. It has a high alpha content, but its cohumulone is high as well and there isn't a lot of information on it other than that. After a small test batch, it is clear this is a nice hop and the cohumulone isn't as high as reported. Its bitterness is reasonably smooth compared to many other hops and it is full of flavour. For example, I found the bitterness smoother than Cascade is when it is used for bittering.

The dominating flavour from this hop is citrus, grapefruit in particular. It is quite strong but very pleasant. The closest hop would be Chinook. It is similar to the homegrown Chinook that I have grown.

Overall, I rate this hop very highly. But as a word of warning, the flavour and aroma is strong so you don't need much to achieve good results. I will provide an update on how the hop ages in the beer, particularly whether the aroma and flavour remain.

This hop will be excellent for bittering and it has good aroma and flavour properties. Perfect as a replacement for Chinook and will work well in APA's as a result. A Chinook Topaz side by side comparison would be nice.
