The new brewery is up and finished. I will post pictures as soon as I can. It has already had a couple of runs and it works well. Three tier gravity fed system with plenty of opportunity for an upgrade to include HERMS or RIMS functionality. Maybe sometime later.

Two Saisons have also gone down, both on the new system. The weather has been warm without being extreme so keeping the temps up have been difficult. The first Saison is a traditional type Saison using the Belgian Saison yeast from Wyeast. The second is an Australian variant using the French Saison yeast. The second is the more interesting of the two using Aussie hops. Topaz and Pride of Ringwood as FWH additions for the bitterness and 20 mins and 5 minutes with 1g per litre using Summer Saaz. The Summer Saaz and POR should work well with the yeast's spicey notes and the Topaz will add a slightly different flavour in the background. It has fermented well so far. I should be able to keg it soon.
